Vital Wheat Gluten 500g

To make Seitan Sausages:
Ingredients - 1 chopped white onion, 2 chopped garlic cloves, 1/2tsp cumin, 1/2tsp fennel seeds, 80g cooked chickpeas, 2tbsp tomato paste, 1/4tsp salt, 1tsp thyme, 1tsp smoked paprika, 2tbsp soy sauce, 120ml sparkling water, 180g vital wheat gluten.
Method- With a dash of oil fry the onion and garlic until soft. Add the cumin and fennel seeds and cook for 1 minute. Add the mixture to a food processor with the rest of the ingredients excluding the vital wheat gluten. Pulse the mixture until smooth, add the wheat gluten and pulse again until it comes together in a ball. Shape into sausages, wrap into foil and steam for 40 minutes, then lightly fry to add some colour.
